Curry Coconut Chicken

Only five ingredients are needed for this chicken dish to knock your socks off! Round out the meal with a salad and rice or couscous.
3 tbsp butter, melted
1 cup flaked coconut
2 tsp curry powder
4 boneless skinless chicken breast halves
1/4 tsp salt
Place butter in a shallow bowl. In another bowl, combine the curry powder and coconut flakes. Dip chicken in butter, then coat with coconut mixture.
Please in a greased baking dish; sprinkle with salt. Bake uncovered at 350 for 30-35 minutes. Serve with warmed apricot preserves!
