Combining two of my fav things...tacos and meat loaf! The toppings on this dish can certainly be personalized for your family's tastes.
1 cup crushed saltines (about 30 crackers)
1 envelope taco seasoning
1/2 cup ketchup
1 can (4 oz) sliced ripe olives, drained
1 small onion, chopped
2 eggs, lightly beaten
2 tbsp Worcestershire sauce
2 pounds lean ground beef
Salsa, shredded cheddar cheese, sour cream
In a large bowl, combine the first eight ingredients. Crumble beef over mixture; mix well. Press into a greased 9-in x 5-in loaf pan.
Bake uncovered at 350 for 1-1/2 hours or until a meat thermometer reads 160. Serve with topping as desired.
