The real star of this sandwich is the cranberry-pecan mayo! And you can just add a couple slices of bacon to make it a "club".
1 loaf focaccia bread
3 lettuce leaves
1/2 pound thinly sliced cooked turkey
1/4 pound sliced Gouda cheese
8 slices tomato
For the cranberry-pecan mayo:
1/2 cup mayo
1/2 cup whole-berry cranberry sauce
2 tbsp Dijon mustard
2 tbsp chopped pecans, toasted
1 tbsp honey
In a small bowl, combine the mayo, cranberry sauce, mustard, pecans and honey.
Cut the bread horizontally; spread with cranberry-pecan mayo. Layer with lettuce, turkey, cheese and tomato; replace bread top. Cut into wedges.
