I love putting together WOLX's Madison 500 Countdown. We get lots of votes, and it is interesting how much things can change fro year to year. I remember when Don't Stop Believin' from Journey used to land below 300---and then it was used in the final scene of the last Soprano's episode. It shot up to the top 100---then it was used in Glee and this year it looks like it will be in the 20 maybe even top 10 depending on how the voting goes.

I do love riding my bicycle, so i think it's pretty cool that Madison was named the 5th Most Bikeable City in the Country. It's based on a score taken from the availability of bike lanes and infrastructure, 'hilliness,' road connectivity, nearby amenities and the percent of people in the area who bike to work.
The only better cities; Minneapolis; Portland, Ore.; San Francisco and Boston.
It's a long ride there, so I'm gonna go hit the Lake Monona loop again.

Apricot preserves add a surprise sweetness in this delicious dish!
2 pounds fresh mushrooms, chopped
1 tbsp canola oil
1 tbsp butter
6 tbsp apricot preserves
6 flour tortillas
6 oz Havarti cheese, thinly sliced
1/2 pound cooked medium shrimp, peeled and deveined and chopped
2 tbsp butter, melted
In a large skillet, saute mushrooms in oil and butter until tender. Spread 1 tbsp preserves over half of each tortilla; top with cheese, shrimp and mushrooms. Fold tortillas over. Brush both sides with melted butter.
In another large skillet, cook quesadillas over medium high heat until golden brown and cheese is melted. Cut into wedges and serve warm.
In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in enchilada sauce, taco seasoning and cumin; heat through.
Heat rice according to package directions. Spread each tortilla with about 2 tbsps beans. Spread 1 cup meat mixture into a greased 13-in. by9-in. baking dish. Layer with 4 tortillas and a third of the rice, a third of the remaining meat mixture and a third of the cheese. Repeat layers. Top with the remaining tortillas, rice and meat mixture (dish will be full).
Cover and bake at 350 for 20 minutes. Sprinkle with remaining cheese. Uncover; bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes. Serve with toppings of your choice.

1-1/2 cups uncooked penne pasta
1 pound boneless, skinless chicken breasts, cut into 1-in. cubes
1/2 cup chopped onion
2 tsp olive oil
1 can (10-3/4 oz) condensed cream of mushroom soup, undiluted
1 cup heavy whipping cream
10 cups coarsely chopped fresh spinach
2 cups (8 oz) shredded part-skim mozzarella cheese
1/8 tsp pepper
Cook pasta according to package directions. Meanwhile, in a Dutch oven over medium heat, cook and stir chicken and onion in oil for 5 minutes or until chicken is no longer pink.
Stir in the soup and cream. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2 minutes. Stir in the spinach, cheese and pepper; cook for 1-2 minutes or until spinach is wilted and cheese is melted.
Drain pasta; add to chicken mixture and toss to coat.

I was saddened to hear about the passing of Donald 'Duck" Dunn over the weekend, because he was involved in what I consider to be one of the coolest things film can do.
I think that The Blues Brothers movie,in which Dunn played himself, achieved something not a lot of movies can claim:
1) It was a movie about music. Some of the best film (in my opinion) revolve around music.
2) The movie pulled off the balance between comedy and passion for music.
3) Dunn and all The Blues Brothers acted, played themselves and performed great music in it.
That's a trifecta homerun for me. Thanks for the music Duck.
