Always Try New Things

That's the lesson I learned this week, even though I was overwhelmingly reminded that sticking with what you know is not a bad plan either.

After qualifying earlier this month, I was invited to the finals of the Quaker Steak and Lube Bare Bones Wing Eating Contest.  It was held Tuesday night and the top prize was $250 cash and $250 in QS&L gift cards.

It's an honor just to be nominated, right?

The event was a speed eating format.  There were eight qualifiers (including myself) who were given 15 chicken wings and a serving of french fries.  Then they hit the stopwatch. Fastest eater wins.

My competition included last year's winner, his brother, Waunakee's Head Football coach, one of his players, a big talker, a short guy drinking a lot of whiskey and one hefty sized gent.

Paul, the Head Football Coach, brought his entire team, plus a variety of other students to cheer him on.  Imagine 40 football players surrounding your table, but you're the opposing team.  It's a little intimidating.

I went with a chicken wings first, fries second strategy.  Bad choice.

At 2m 15s into the competition, the brother of last year's winner put his hands up signaling he was done.  I still had four wings and all my fries left.  I also had a small feeling that ingesting that much food, that fast, it wasn't going to stay down.  I did keep it down.

The football coach followed in 2nd place and the big guy was next.  At that point, everyone else gave up because there were only prizes for 1st, 2nd & 3rd.

I can say that I put away 15 wings in about 2m 30s, but I can also say I enjoy eating like a normal person too.  Check this one off the bucket list

Mexican Chicken Penne

Creamy, colorful and quick--this dish is a weeknight hit! 

1 package (16oz) penne pasta
2 cups cubed cooked chicken
1-1/4 cups salsa con queso dip
1/2 cup milk
1/4 tsp salt
1 can (15oz) black beans, rinsed and drained
1 large tomato, chopped
3 green onions, sliced
1/4 cup shredded cheddar cheese

Cook pasta according to package directions.  Meanwhile, in a large bowl, combine the chicken, salsa dip, milk and salt.

Drain pasta; return to pan.  Stir in chicken mixture and toss to coat.  Top with black beans, tomato, onions and cheddar cheese; heat through.

Honey Fruit Salad

Honey and lime transform your 'same-old, same-old' fruit cup into something spectacular!

1 can (11oz) mandarin oranges, drained
1 can (8oz) pineapple chunks, drained
1 cup green grapes
1 cup halved fresh strawberries
1 medium firm banana, sliced
3 tbsp honey
2 tsp lime juice
1/4 tsp grated lime peel
1/4 tsp vanilla extract
1/4 tsp poppy seeds
Fresh mint, optional

In a large bowl, combine the fruit.  In a small bowl, combine the honey, lime juice, lime zest and vanilla.  Pour over fruit; gently toss to coat.  Sprinkle with poppy seeds.  Garnish with mint if desired.

Eating Local

Eating local is a great way to make sure you're getting the most out of your food. In Wisconsin, this isn't a hard thing to do. There are farms everywhere you look and markets, including the Dane County Farmer's Market, selling local produce and goods every week. But what makes local food better than stuff shipped in to your grocery store?

1. Local produce is better for you. The longer your food takes to get from the ground to your plate, the more of the good stuff it loses. The amount of healthy nutrients that make fruits and vegetables so good for you slowly diminish as time goes by. By eating locally grown foods, your foods don't spend time on trucks and in stores and can be eaten at their peak.

2. Local foods taste better. Just like nutrients, produce loses its flavor as time goes on. Vegetables ripen and sugars turn to starches.

3. Local food preserves genetic diversity. Big commercial farms grow produce that can stand up to big farming machines and weeks on the shelf. This leads to very little variety. Local farms use their years of knowledge to diversify, growing fruits and vegetables that taste good and look good.

4. Local food is GMO-free. Many large commercial farms grow genetically modified crops. Luckily, many local farms do not have this option, nor could they afford it. What their growing is fresh, natural produce.

5. Local food supports local farm families. Our country has fewer and fewer farms as the cost rises and returns drop. By selling locally, smaller farms can cut out the middle man and profit directly from their work.

6. Local food protects the environment and wildlife. Clean water and soil are important for local farmers to grow the best crops they can and so they must be careful to protect it. Large commercial farms often use chemicals and large machinery which pollute the areas around them.

These are only a few of the benefits of eating locally grown foods. You'll be helping yourself, your family, families around you, and the environment. So get out and find you local farmer's market, CSA, or local farm and start buying local.

Mozzarella Beef Roll-ups

You could also call them Pizza Burritos, I guess.  They come together fast but taste like you spent all day on them!

1 lb lean ground beef
1 medium green pepper, chopped
1/3 cup chopped onion
1 can (8oz) pizza sauce
28 slices pepperoni
1/2 tsp dried oregano
6 flour tortillas (10 inches), warmed
6 pieces string cheese

In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain.  Stir in the pizza sauce, pepperoni slices and oregano.

Spoon about 1/2 cup beef mixture off center on each tortilla; top with a piece of string cheese.  Fold one side of tortilla over filling and roll up from the opposite side.

Place seam side down on an ungreased baking sheet.  Bake at 350 for 10 minutes or until heated through and cheese is melted.
